Harvest Monday

It's that time again, when many gardeners in many places post their weekly harvests for us to see! Stop by Daphne's Dandelions and see what all the fuss is about.

We harvested tomatoes, peppers, egg plant, okra, jalapeno peppers, watermelon,beans and squash. Everything we harvested is pictured in that first picture on the table below. Now the real work begins. Processing! Our post about that will have to wait for Thursday's Kitchen Cupboard hosted by Robin.

Our cherry tomato harvests this week is slowing down. We probably gathered around 2 or 3 pounds. Belle simply roasts them, freezes them and then adds them to whatever in the winter.
 We don't know what variety these larger beefsteak tomatoes are. It was a volunteer. No, Belle tells me that she planted it there, only she forgot what the variety was. We know it's an heirloom. The flesh is pinkish. The fruit is very large. Even though we don't know what it is, we're still going to save seeds, 'cause they're great!

We planted several roma tomato varieties. We have a list that will tells us which varieties are which, but we'll have to sort them out later. For now, we're just happy they're producing so well. It's gotten colder this week. Much colder. We wonder what that will do to the plants.
 Lot's of eggplant. We have 4 varieties. Belle's been making Eggplant Parmesan, vegetable paninis, adding it to spaghetti sauce and grilling it in an olive oil soy sauce marinade.
 We harvested plenty of spaghetti butternut squash this week! The boys helped mom haul it up.

    Pssst....those "spaghetti squash" are butternut squash :-)

  2. What a great harvest! The unknown tomato looks like a Belgian Beauty. If I gave you that variety of seed, that may be it. Your eggplant seem to be doing very well also. Keep up the good work and help Belle with all that preserving!

    1. Thanks Robin. I think you're right and we're saving seeds. It's an incredible variety. I'm definitely pitching in with Belle in the preserving department. In fact just yesterday I burned half a batch of roasted red peppers. Is she ever patient with me!

    1. Thanks Bee Girl. We like the butternuts too, but we're still looking for one or two staple recipes. We've got the soup recipe down. Do you have any other recommendations?

  4. Wonderful harvest haul! Love the abundance of squash especially since it stores so well for winter. That huge watermelon is just awesome!

    1. It definitely stores forever. We still have two butternuts left from last year. Now that the weather's turned, they'll be soup soon.

  5. That's great harvest! Juicy watermelon! Mine never go larger that an orange size....sigh...! ;)
    Anyway do you receive any malware warning when go to my blog? I don't knw why.....but no danger actually since I try using another acc to enter...strange....

  7. What a Bumper harvest.............The heirloom tomato looks a beauty, funny how each year there's a particular veggie which surprises.

    1. Thanks Andrea. We still have potatoes and sweet potatoes in the ground. I think they'll carry us past our 1,000 pound goal this year! Yes!

    1. We grew several varieties, but only two butternut plants survived bugs and disease. They gave us this entire harvest. Your harvest was big too! I look forward to seeing some of your recipes this winter.
