Thursday's Kitchen Cupboard 10/20/11

Belle has been busy canning this week. She finished up several weeks of jalapeno harvests with 8 pickled pints. She also canned 10 more jars of apple butter! She has one box of galas left to go!


Our meal plan has included lots of apple butter treats! We've had it in our oatmeal in the mornings, with plain yogurt and berries or with cottage cheese for lunch. Belle also made fruit smoothies with our frozen berry stash. She mixed yogurt, bananas, berries and agave nectar. She used up the last of our frozen red tomatoes to make spaghetti sauce. And we had beef stew with dried wild mushrooms.  This morning I saw a half made kale quiche sitting in the fridge. I can't wait to get home for dinner. Thanks for all your hard work Belle baby!





Sorry we don't have many pictures. In fact the pictures of the whole tomatoes are from earlier batches, but the sauce is this weeks sauce.  We're working on the camera-in-the-kitchen thing.

  1. Omg I was reading this on my phone and thought that picture of the frozen tomatoes was of some horrible bloody eggs. Ha! Little pictures and eyes getting close to 40 don't mix.

  5. It took me a while to figure out that first photo myself! I see you cored the tomatoes before freezing. I froze some whole and haven't used them yet. I may wish I had cored ours first!

    It sounds like Belle has been busy in the kitchen for sure. And it also sounds like the two of you make quite the team.

  6. Thanks Dave, we make the perfect team -she cooks and I eat! Not really... Truth is between the two of us, we just hope to get the work done.

    The problem with thaw tomatoes, as you must know is that they loose their firmness completely. You can probably fish the cores out after freezing just about as easily and cutting them out before.

  7. I think one of the most interesting things about reading blogs, particularly from North America, is how many things I think what??? to. For instance I have never heard of Apple Butter before. It looks delicious, what do you use it for?

  8. Hi Liz, apple butter is fairly new to us too. It's a Pennsylvania Dutch thing. We learned about it when we moved here to central, PA. It's a lot like apple sauce, only spicier, sweeter and more highly condensed. It goes with all the things I mentioned in the post and more.
