Thursday's Kitchen Cupboard

Lately Belle has been using freezer and pantry items for most of the ingredients in our meals.  We've had lots of soup, crock pot dishes, casseroles and more. Here's a small sampling of what we're eating around here this winter.

100% grass fed beef on a wheat roll (not homemade) with canned pickles, fresh lettuce from the cold frame and sweet potato fries from the pantry.



Belle made homemade whole wheat pumpkin bread with the volunteer pumpkins that grew near the compost bin last season. The recipe can be found at Cookie and Kate. We especially like the addition of millet to the recipe for a crunchy textured experience.

We've also enjoyed plain cantaloupe pieces from the freezer. They lose their firmness when thawed but not their flavor!


Homemade ice cream made with strawberries from the garden is always a big hit with the boys too.

  1. All of the hard work definitely pays off! How lucky we are to have all these wonderful meals without going to the so called "grocery store"!

    The boys really look happy with that ice cream!

  2. Everything looks great. I love that little ice cream maker. I make ice cream and frozen yogurt for my DB with no sugar. He doesn't seem to mind as long as it is chocolate. In fact I was checking the freezer today and he only has 3 cups left so guess I need to get busy.

  3. Jody, looks like Belle has been making some good eats at your place..that Mill looks interesting! Also that Cuisinart ice cream or is it a yogurt maker?

  4. Just a while ago I was looking at some leftover millet in the fridge and wondering what to do with it. Now I know, thanks! And, I especially like the idea of ice cream, yum!

  5. Robin, This is our first "serious" gardening year (to use Belle's words) and we're now seeing the payoff. It's turning out to be dollars and cents payoff!

    Wilderness, we're happy with the ice cream maker. We've had it a couple years now and it keeps going strong. Sugar free ice cream sounds like a hard sell. I'm glad you've been able to make it work.

    Ginny, Belle sure has been making some good eats! It's an ice cream maker and it works great!

    Leigh, I guess the millet is very versatile. It can go into all kinds of bread. Ice cream is always a hit, right!

  6. mmm...that ice cream look so yummy. I have to put ice cream maker in my wish list this year;-). We are using many of our frozen stock this week as I need some space now for berry season. We still have last summer frozen beans. Your frozen melon looks good. I will remember that it can be frozen.

  11. I'll have to try that pumpkin bread recipe. I love millet in bread, but I never thought to try it in a sweet/quick bread!
