Thursday's Kitchen Cupboard

Wow, it's Thursday! Does anyone else feel a little behind in the garden right now? We've got asparagus plants that are dying to go out, celery that looks like it's ready too. We've got tomatoes, peppers, eggplant, pumpkin, squash and melons that are outgrowing their soil blocks. There's tons of lettuce outside that needs to be thinned. The soil in most of the garden still needs to be turned. The fence is not up. The watering system is in shambles, and the time is now! Thank goodness it rained this evening, 'cause there's been a lot of watering going on around here too.

In addition to the rain, Belle gave a little relief too. She made pumpkin black bean soup.  Last fall she cooked and canned pumpkin that came from a volunteer plant that grew near the compost. She made pumpkin black bean soup today.

The recipe can be found at allrecipes.com Belle added sage to spice it up a little more.

    1. Yea, it's very tasty. The pumpkin gives the soup a good color and texture.

  2. It's definitely a busy time of the year for us gardeners!! I started a lot of my seeds a little later then usual and the seedling shuffle has been much easier to deal with.

The soup sounds yummy! It's a good thing Belle keeps you well fed with all that work you have to do!!

  3. It is very busy time in the garden, all my letuces need to be thinned out too and I just planted mellons and squashes in the seedling trays so they should be ready for transplant in 3 weeks.

    1. I wonder if butternut squash would be a good substitute for pumpkin. We've still got 4 from last year.

  5. Now that sounds like a really interesting combination, and one I've never tried. Time to hunt out some black beans as its pumpkin season here.

    1. I ate the last serving last night! It goes great with wheat bread, or homemade buttery croutons.
