Wine Racking
Last summer we we began a new brew of several gallons of peach and, later in the fall, apple wine. The peach wine lacked clarity at first. But now after several months, and several natural clarifying agents, it looks pretty good. The apple wine looks outstanding. We racked all the wine again last night. It looks like this racking will separate the last of the lees (sediments). If so, we'll bottle the wine this summer and then have our first wine tasting dinner in January of 2012. Both flavors taste pretty good already. I can't wait to open the aged bottles.
