Organic Weed Killer, Butternut Squash Soup and Kale Quiche

 
Hands = Organic Weed Killer!


This is our strawberry bed, I don't see any strawberry plants, but I know they're in there. Somewhere! After the June berries stopped coming we neglected them for the rest of the summer.


Yesterday we finally did the work. It's one more thing we can check off of our fall to-do list.

The chickens hung out with me the whole time. They must have thought I was their new scratch partner.

Here's Belle's great garden recipes I promised to share with some of you in our last post.

Butternut Squash Soup (Recipe courtesy of Gourmet Magazine)
Ingredients
1 medium butternut squash
nonstick vegetable oil spray
1 medium onion, chopped
1 tablespoon freshly grated ginger, [not]optional
3 tablespoons unsalted butter
3 cups chicken broth
1 -2 cups water, as needed
Salt and Pepper to taste
Sour Cream for garnish.

Halve squash lengthwise and bake until tender (40 -45 minutes). Cool. Scoop from skin. Cook onion and ginger with butter in saucepan, over moderately low heat until onion is softened. Add the broth and simmer for 10 minutes, covered. Add the squash pulp to the saucepan. Transfer mixture to a blender of food processor in batches, and puree until smooth. Add water for desired consistency, and salt and pepper to taste. Return soup to saucepan and cook over moderate heat until hot. Garnish portions with heaping low-fat sour cream.


Kale Quiche (Belle's personal recipe)

1/2 pound kale
1/2 cup sliced mushrooms
1/2 cup sliced kalamata olives
14 eggs
3/4 cup crumbled feta
1 diced bell pepper

Saute chopped kale, bell peppers and mushrooms place in bottom of large glass oven dish. Layer sliced kalamata olives and feta cheese over the kale. Mix eggs in separate dish with Greek seasoning, salt and pepper. Pour egg mixture over everything and stir into layers as desired. Bake in oven on 375 for about 40 minutes.

  2. Would you believe I have never tried Kale? However, that quiche sounds like something I could gobble right up.

  5. Hi Ginny, we forgot to take a picture of the pork chops and kraut, but let me tell you it was delicious.

    Here's the recipe, Mmmm good

    4 pork chops
    1 cup chopped onion
    1 14 oz can of beer or chicken broth
    half teaspoon of caraway seed
    quarter teaspoon of celery seed.
    1 16 oz can kraut drained
    1 red apple chopped
    4 bacon strips cooked and crumbled

    brown pork chops in skillet with oil, then drain. Put onion, pepper, beer,caraway seed and celery seed in pan with pork chops. Cook over medium heat until cooked through. Then add kraut and apple and cook until heated through and sprinkle with bacon. Enjoy!

    Belle said the recipe was OK. Next time she'll try something different. I on the other hand was very satisfied. Mmm, mmm, good.

    Apple Pie Gal, let me say again how much I loved your walk through the garden video. It made us feel like we know what you and what your doing at your place a little better now. BTW, our chickens do exactly the same thing to our peach trees! Darnit!

  6. You should do it too! We'd all like that :0) And they did kill a few of my itty bitty peach trees. We planted from the pits and they were about 2 feet tall and 2 years old. However I have 4 others out front that they can't get to. Those are about 3/4 feet now. Those are the ones that need pruning. I am going to take a picture and then you can tell me if I still need to go to the 4 or 5 branch thing yet this year or not. Note to self...take picture

  8. My organic weed killer has not been up to par, lately. Weeds are engulfing the garden left and right! At least yours is in good working condition; your strawberry bed looks great!

  9. Apple Pie Gal, I'm getting up the courage to give a tour. It would actually be very easy. You can see our entire garden, fruit trees, melon patch chickens, etc from our back yard deck!

  12. Saw the Butternut Squash recipe in your sidebar and had to check it out. I have about 10 butternuts in the basement.....time to start experimenting. Your recipe is the first I'll try :-)
